quick takes



this is quick takes valentine's style.
if you clicked over from conversion diary,

you are correct to assume that i am technologically challenged.
 

1.  yesterday bo christian sat in my lap and let me rock him.
twice.
it was his valentine's gift to me.

eating a valentine cookie.
2.  the last cake baking adventure you will hear about:
so, i made a red velvet cake with cream cheese frosting to celebrate the day.
after looking at red velvet recipes, i decided that duncan hines would be the best choice.
wrong.  mr. hines let me down big time.
the cake was very moist, but tasteless.
i did make the cream cheese icing.  it was fit for a king!
except for the fact that there was little pieces of paper in the icing.
i think it must have been part of the butter wrapper, maybe??
i had a helper who put the butter in the mixer.
so anyways, i am officially done with cakes.
i've given them lots of chances and they just do me wrong every time.

3.  don't worry, we were not without dessert.
my mother saved us - she sent us sugar cookies.

4.  connor took his own money to school and bought me flowers.

5.  these are the sweetest pictures.
my big boys just got off of their bus and bo christian is running to them.


they both take time to greet him!

i'm sure he's telling them all about that cookie in his hand.


6.  since all of these pictures were taken within a 5 minute time span,
i don't have a single picture of my favorite valentine.
husband was still at work.

7.  one not valentine related:
connor made his first confession last week.
of all my boys, i would have liked to be a fly on the wall to hear his confession.

see him way up there with our favorite priest.

a king cake recipe

today is fat tuesday.
that means one thing in our house:
king cake!

 
 
i can't remember the story behind the king cake.
but, there is a story to it...
the only part i remember is whoever finds the "baby jesus",
has to provide the cake next year.
and that part doesn't even matter to us because i make the cake each year.
 
 
anyways, here you go:

for the cake- 
2 (8oz) crescent rolls
8oz cream cheese
6 tbsp (or more) confectioners sugar
1 tsp vanilla
2 tbsp melted butter
1/3 cup brown sugar
1 tbsp cinnamon
 
for the icing -
1 cup confectioners sugar
1-2 tbsp milk
food coloring
 
preheat your oven to 350'.
spray nonstick cooking spray on a baking sheet.
 
separate crescent rolls at perforations.
place them on your baking sheet like this:
 
 
about halfway down from the points,
you need to press the seams together.
 
next, beat the cream cheese, confectioners sugar and vanilla.
when it gets yummy and creamy,
spread it on the dough in the center where you pressed the seams together.
be sure to "hide" your baby jesus in there too.
 
 
yes, we use a lego guy as baby jesus.
and i had an extra crescent roll left over.
obviously i am not an expert at this.
 
get out another bowl to mix the butter, brown sugar and cinnamon.
sprinkle that crumbly mess over the cream cheese.
 
now fold the triangles up over the filling forming a circular shape.
it will look something like this:
 
there is my taster who calls himself a helper.
 
bake it for about 20 - 25 minutes or until golden brown.
let it cool.

now you've got to put the icing on.
combine all the confectioners sugar and milk in a bowl until smooth.
(i always use more sugar and milk)
divide the icing into 3 bowls.
make one green, one yellow and a purple one.
drizzle the icing over the cake.
